My friend had the combination of honey lavender, cinnamon dulce de leche, horchata, chocolate salted caramel topped with whipped cream, hot fudge, and sea salt. The house made toppings elevated this sundae to another level since the marshmallow and chocolate sprinkles are better tasting and made of better quality ingredients. Both lightened my sundae since the brown butter oatmeal cookie was sweet yet earthy and the matcha pistachio has the certain buttery flavor of the pistachio and earthy bitterness of the matcha tea. The Earl grey lemon had a wonderful balance of the bergamot and lemon flavors. The most surprising one was the bay leaf since it’s actually combined with lemon to mellow out the sharp bitterness and it transported me to the Mediterranean. Each ice cream was creamy, delicious and tastes like the flavor stated. My bowl (seen at the very top of this post) consisted of bay leaf, matcha pistachio, brown butter oatmeal cookie, and Earl grey lemon ice creams topped with torched house made marshmallow and house made chocolate sprinkles. It will not be smart of me to order one of each scoop in a large bowl and appreciate the various flavors and nuances each flavor could give me. Whenever I’m faced with many choices that sound good (at least when it comes to food), I want to try as many as possible and the best way for me to do that is opt for the Flight of Four that includes the housemade waffle chips. When we entered the shop it smelled intensely of burnt vanilla since her team was making the burnt vanilla bean ice cream while she’s working the front. What drew me to Honeycomb was the creative, sophisticated flavors like alfajores (one of my favorite Argentinian sandwich cookies filled with dulce de leche) and Earl grey lemon. We ended up at Honeycomb Creamery, a relatively new, artisan ice cream shop not too far from where I was staying. As usual, Mother Nature has her mysterious ways and gave us a decent day and a half of sunny weather that it felt mild enough to have ice cream – and it seemed like the town felt the same way. While I heading to Boston, I didn’t have a lot of hope for an ice cream weather since it was dreary when I left New York and by the time I’ve arrived there, it had this terrible mix of snow and sleet.

Most of our clients are wonderful, however, people are behaving badly this year more than normal and some clients are just completely disrespectful of your business and we still have unpaid consultation fees from Telehealth consultations. Trying to be mum and business owner at the same time was impossible, and yet, because it was what was being asked of me at the time, it made me feel like a complete failure. Over the two months of being home, there were multiple screaming matches with them while I was trying to get them to do school and keep my business alive. A particular low point was having my kids fight in the background of a client zoom meeting. I’ve struggled with anxiety on and off the last few years and it came back with a vengeance this year. This wouldn’t have happened if I’d laid off half my team. I’ve kept all my staff and the business is doing better than ever. The great thing is, the investment paid off. I was so scared, I thought for sure we weren’t going to make it, but I was not going to let my business die without a fight.Įven though my salary was less, somehow it didn’t actually feel like we were on less money. I dropped my salary down to the JobKeeper rate so I could ensure everyone got paid and we put some of our personal savings into the business so we could keep going. It broke my heart to think these people could lose their jobs. My accountant told me to let go of everyone was on JobKeeper. In April we experienced a 56 percent drop in revenue and our cancellation rate doubled in two days. I shut my two dietetic clinics at the end of March, I didn’t want to risk someone catching COVID from my business. What was your first memory of being materially affected by COVID? We came back to COVID cases in Australia and things starting to look pretty serious. One weekend in March we’d gone camping off the grid with no phones/reception. I also find watching the news quite anxiety-provoking and try to do it as little as possible, so I was in a bit of bubble really, not really paying attention to what was going on. That virus never affected us here in Australia and I thought the same thing would happen with COVID-19. When I first saw the news, I just thought it would be like SARS. What were your first impressions of COVID in early 2020? My step-dad and brother-in-law both had their cars written off. We had no idea that other parts of Canberra weren’t so lucky. Up north in Gungahlin I watched the storm come across and we got a few speckles of rain. My husband called me that morning, told me a hailstorm was coming and not to take the car out. How did you fare in the great hailstorm of 2020?
